Proofreader Bakery is inspired by artist Jason Polan, who set out to draw Every Person in New York.

What began as a way to stay sober grew into a mission: bake a loaf of bread for every person in Austin. Every loaf we bake is a small act of service.

We also host bread drops and events where you can purchase and preorder loaves. Your support helps offset the costs of running the free bread project.

WHY “PROOFREADER”?

Before I became a baker, I was a writer. Proofreading was the final step of reviewing the work, revising it, and making sure the details were right.

Bread is similar. After the dough is shaped, it must proof. Time allows it to rise and develop structure. Rush it and the bread suffers.

Proofreader reflects both crafts. It connects my past as a writer with my work now as a baker and the belief that good work takes patience, attention, and time.
